Peanut Butter Caramel Bars

Peanut Butter... One of the most perfect foods on the planet.  Such a simple food, deliciously smooth and creamy (not a fan of the crunchy stuff here,) full of protein, great on so many different foods and you can typically find a jar in most pantries!  Many a meals in my past consisted of peanut butter, sometimes there was bread or apples, sometimes there was just a spoon.  But it sustained me through those college years.  You can imagine then, that I was quite excited to try out these peanut butter caramel bars.  Take my go to for sustenance and my love of caramel and you have a match made in culinary heaven!

Peanut Butter Caramel Bars

Recipe adapted from Lemons for lulu
14 oz. caramel sauce
¼ c. creamy peanut butter
1 c. flour
1 c. oats
¾ c. brown sugar
½ tsp. baking soda
¼ tsp. salt
¾ c. melted butter
1 11.5 oz . package of white chocolate chips (regular chocolate chips would also be delicious, or a combination of the two!)
  1. Preheat oven to 350 degrees.  Combine the caramel sauce and peanut butter in a sauce pan over low heat.  Stir occasionally until the peanut butter melts into the caramel and is completely smooth.   Remove from heat.
  2. In a large bowl, combine the flour, oats, brown sugar, baking soda and salt.  Mix thoroughly and stir in the melted butter.
  3. Spread half of the mixture into a 9 x 13” pan, the layer will be quite thin.  Bake for 8 minutes.      
  4. After the crust is baked, sprinkle the chocolate chips over the crust and top with the peanut butter caramel mixture.  Sprinkle the remaining crust over the top of the caramel and gently press down the crust.  Bake for an additional 12 minutes or until the top is lightly browned.   
  5. Let cool slightly.  Cut into bars before it cools completely.
